Caramelised Onion and Maple Baked Camembert

I don’t know about you, but when it comes to festive food one thing I always look forward to is the cheese. The cheese board after dinner on Christmas Day is probably my favourite part of the meal (sorry pigs in blankets). But something else that I love to indulge in at this time of the year is a baked camembert.

Not only is a baked camembert utterly delicious, but it is the perfect sharing dish for cosy nights in. Although it can get a bit hectic when everyone is fighting over getting the most cheese!

So today I have a truly indulgent recipe for a baked camembert to share with you – it gives it a bit of a twist and makes it even more delicious in my opinion. Plus, it’s super simple to make and is sure to impress any guests you have over this Christmas.

Ingredients


1 camembert

1/2 red onion (finely chopped)

2 cloves garlic (chopped)

1tsp maple syrup

2 tsp brown sugar

Splash of balsamic vinegar

Drizzle of olive oil

Method


1. Preheat the oven to 200 degrees (180 fan).

2. In a frying pan, fry together the onion and garlic in olive oil. Add in the sugar and balsamic vinegar and fry until the onions are soft and dark.

3. Cut the top off of the camembert – making a sort of lid. Add the onion and garlic mixture to the top and drizzle the maple syrup over it. Pop the lid back on top.

4. With a knife, score 3 lines down and another 3 across the top of the camembert. Drizzle a small amount of olive oil on the top.

5. Place the camembert into a ceramic baker, or alternatively leave it in the packaging but place on a baking tray. Bake for 15-20 mins until it’s bubbling on the top.

Serve up the baked camembert with fresh bread and some charcuterie and you have the perfect festive sharing dish. I think the sweetness of the onions and maple syrup balances really well with the slight bitterness of the cheese – it also just makes it seem a bit more special!
