I’m definitely a breakfast person – it’s my favourite meal of the day and I’ll be honest, I often go to bed thinking about what I’m going to eat the next morning. Yeah, I’m one of those people.
I’ve been trying to be a bit healthier recently, after gaining some weight after my skiing accident/knee surgery I feel like I have to change some eating habits so I can feel a bit better about myself. So I’ve been making a lot of baked oats recently, as it’s very filling but definitely better for you than a boring bowl of cereal!
It’s super easy & fast to make – you’ll just need to allow time for them to cook in the oven. I literally wake up, throw the ingredients into a bowl & then into the oven for 25-30 mins while I start to get ready.
Ingredients
30g porridge oats
2 tbsp natural yogurt (I use low-fat, but use whatever yogurt you like!)
1 egg
1/2 tsp baking powder
Splash vanilla essence
1 small apple or 1/2 large apple
1 tsp cinnamon
Sweetner of choice (I use a sugar-free vanilla syrup, but you could use honey, sugar or whatever you prefer!)
Method
- Combine all of the ingredients into a small bowl. Decant into an oven-safe dish (if you don’t have a cast-iron or metal dish, using a normal bowl is normally ok!).
- Pre-heat the oven at around 180 degrees. Pop the dish into the centre of the oven & bake for 25-30 mins, until golden brown on the top.
- Remove from the oven & enjoy!
It really is that simple! Whilst the picture does not look overly sexy, I can guarantee that it does taste really good. It’s the perfect warming start to Autumn & Winter mornings – it is certainly my go-to for a healthier & satisfying breakfast.
